What's Cookin'? Shrimp 'N Pasta

Another healthy, easy dish for the whole family.

A New Orleans native, I'm used to cooking with lots of butter. Everything is breaded and often deep-friend. And did I mention delicious? But, sometimes all I really want is a fresh, clean, simple dish that's not going to make me want to take a nap right there at the table.

 

Shrimp 'N Pasta

Ingredients:

1 bag of frozen shrimp, peeled, frozen and raw

4 zucchinis

4 small, green bell peppers

Just a handful of pasta

1 jar of your favorite pre-made pasta sauce

Preparation:

Thaw your shrimp on the counter for several hours or defrost in the microwave based on its weight

Put a pot of water on to boil

Dice zucchini and bell peppers to desired size

Sautee veggetables and shrimp in separate pans while pasta cooks in boiling pot of water

Pasta generally takes around ten minutes to cook while shrimp takes around 15 minutes. I prefer my veggies a little less crunchy so I sautee them for about 15 minutes.

Heat a small bowl of pasta sauce in the microwave (make sure to cover! for your sake, for the microwave's sake, cover it!) or in a small pot on the stove.

Mix shrimp and vegetables. I find that zucchini, green bell peppers, and shrimp have flavors that compliment each other very well.

Pour hot pasta sauce onto pasta and serve!
