What’s Cookin’? Cheesy Roast Beef Sandwiches

It's hot and this was the limit of my cooking tonight.

With the summer heat in full force, I knew I wasn’t spending too much time in the kitchen getting dinner ready so it was roast beef sandwiches with raw veggies.

Usually when I make these, there’s a bit more cooking, which turns them into even more of a gooey mess. I usually heat the roast beef (just the deli kind) in brown gravy and if I’m feeling really crazy, I add onions and mushrooms. It worked out okay, though, because it turns out I had no brown gravy after all!

But despite the heat, one thing I couldn’t give up with this sandwich was the melty cheese. So I buttered the snowflake rolls (fresh-baked from ), sprinkled them with garlic salt and stuck them in the toaster oven. While they were crisping up, I put some cheddar cheese and a splash of milk in a small saucepan and heated it until it melted.

Now the snowflake rolls are pretty small and I only had four so I also toasted some bread for the kids. And again, my thrown-together meal fell short as there wasn’t too much roast beef left so the kids had ham…they didn’t mind because, like me, they know everything is better covered in cheese sauce!

I did make some fruit smoothies to go with dinner to balance out the cheese sauce...plus with the Buy One Get Two Free sale on blueberries, I had some I needed to use! So I added those, some frozen strawberries, a banana, some OJ and a bit of yogurt to the blender for a cold, healthy drink to go with dinner.

  • Rolls
  • Extras: gravy, mushrooms, onions

What to Do: Toast the rolls. Heat the cheese and milk in a pan until it melts. Put the sandwiches together and serve!
