What’s Cookin’? Filet with Gorgonzola Sauce

While the children are away, the parents will play–or at least eat super yummy steaks!

With our blended family, on Saturday nights, we just have the baby at home. Before he was born, we fully took advantage of our ‘night off,’ often heading out for dinner.

While we still go out on occasion, it’s not quite as relaxing with a seven-month-old who loves to yell (he just figured out DADADADA!–cute? Maybe…at the table next to you while you eat dinner? Definitely not!), bang things on the table and thinks he should be fed whatever you’re eating at warp speed.

So, we’ve been trying to make something a bit ‘nicer’ when we have the chance to eat an (almost) adults-only meal. Plus I went grocery shopping–note the fresh veggies!–so I picked up a couple filets while restocking our empty fridge and bare cupboards for our Saturday night dinner.

I like grilling because my husband gets involved and he’s getting pretty good on the grill! With freshly made mojitos in hand (did I mention I also picked up fresh mint, some limes and a muddler?), we got to work. I had put the steaks in some sesame ginger marinade when I got home so those were ready to grill.

I took the cheater’s way out and stuck a couple potatoes in the microwave and then sautéed the asparagus. Well, I think I sautéed…here’s what I did. Put a chunk of butter, a squirt of lemon juice, some garlic (note a theme with my meals and the garlic?) and some white wine and cooked it until it was cooked but still crispy.

When that was done, I poured the buttery, wine-garlic liquid into a small saucepan and heated it up. I added a bunch of Gorgonzola cheese and stirred it until it was a sauce. While for appearances’ sake, the Gorgonzola sauce is only on the steak, it was so delish that I poured it over everything!

Silas (the yelling baby!) looked on longingly while he ate his baby oatmeal. I eventually gave in to his big blue begging eyes and gave him a taste of my potatoes and the teeniest, tiniest bite of steak–after all, this was a meal for the adults to enjoy!

Quick Fix

What You Need

  • Filets (or other steak of choice)
  • Marinade
  • Asparagus
  • Potatoes
  • Gorgonzola Cheese
  • Butter
  • White Wine
  • Garlic
  • Lemon Juice

What to Do

  • Marinate the steaks and grill.
  • Microwave the potatoes (didn't think I needed to really add this one, just wanted to be thorough!)
  • Sauté the asparagus with butter, wine, lemon juice and garlic.
  • Put the liquid in a saucepan, add Gorgonzola and stir over heat.
