What's Cookin'? Healthy Hummus and Veggies

Because sometimes it's easier to just pull stuff out of the fridge than cook!

My kids love dipping things. And, like me, they're quite happy to have a nice, simple, thrown-together-at-the-last-minute dinner. My husband was heading out for the night so I took the easy route for this meal.

A big scoop of hummus in the center with plenty of things to dip in–our cucumbers from the garden were not quite ready so we had crackers, tomatoes, carrots and some asparagus, which I cooked up real quick with some butter, white wine, garlic and season all. 

The kids love meals like this where there's a little bit of everything. The dip-ability factor, plus all the different colors, definitely makes it fun to eat and always has them asking for more.
