Last night's made for a great leftover meal, as well. To change it up a bit, though, I turned it into gorgonzola-bacon-chicken wraps.
I cut up the leftover chicken and put it in a frying pan with a splash of white wine and a bunch of gorgonzola then crumbled in the bacon. I was wishing I had some frozen spinach to throw in to add a bit of 'healthiness', but went for garden cucumbers with hummus. And some leftover scalloped potatoes (oh wait–that's where the rest of my spinach went!) to round it out.
What You Need
- Gorgonzola Cheese
- White Wine
What to Do: Cut up the chicken and heat it up with some white wine and gorgonzola cheese until it melts. Crumble the bacon in and wrap it up!
