What's Cookin'? Meatloaf by Any Other Name Is Still Meatloaf

No matter how you dress it up or what shape you make it, meatloaf is still meatloaf.

So I tried to plan making meatloaf on a night when my stepdaughter was at her mom's. Everyone else likes meatloaf, which baffles me because I remember hating it as a kid. (Think Ralphie's little brother in "A Christmas Story" when Randy says, "Meatloaf, smeatloaf, double-beatloaf. I hate meatloaf."

But that plan didn't work out–she was at our house and that's what I had ready to make for dinner so I tried to change it up. 

After mixing up the 'loaf, I grabbed the cupcake tin instead of a loaf pan. I topped the kids' "meatcakes" (that doesn't sound appetizing, does it?) with some ketchup and thought it could maybe disguise it just enough. Just enough so maybe she could not see it as "disgusting meatloaf" and actually try it.

Well, that plan didn't work. My son said, "Ooh meatloaf!" and I said, "No, it's not meatloaf." And my husband jumped in saying, "It's turkey souffle."

While everyone else enjoyed it, she certainly did not, but she did eat it because it was dinner. I tried to make up for her hatred of meatloaf by making edamame for the side–her favorite.

Quick Fix

What You Need

  • Ground turkey
  • Teaspoon of worcestershire sauce 
  • 1/3 cup Italian dressing
  • 1/4 cup BBQ sauce
  • 1/2 cup breadcrumbs
  • Extras: I added some gorgonzola and cheddar cheese, too, because I put cheese on everything!

What to Do: Mix all of the ingredients together in a bowl. Once mixed, put it into a lightly greased loaf pan or into cupcake tins. Bake on 400º for an hour (loaf pan) or about 20 minutes for the "meatcakes".
