What's Cookin'? Veggie Quesadillas

Quick, easy and everyone in the house loves them!

Usually I pull out the quesadilla maker (one of my favorite kitchen appliances!) when I don't have much left to eat, but sometimes I like to get fancy with them. I had done the dreaded grocery shopping and had spinach, mushrooms and onions so I cooked those up in some butter and garlic first.

Then it's as easy as putting a tortilla down, adding cheese and the cooked veggies, a little more cheese for good measure and a top tortilla (take it from me, if you forget that step, things get messy!).

While that was melting and crisping, I made some guacamole by mashing up a couple avocados with a couple tablespoons of salsa, some lime juice, garlic and a bit of cilantro from the garden.

Once they're done cooking, cut them into triangles and accompany them with some good stuff for dipping: guac, sour cream and salsa.

  • Sides including sour cream, salsa and guacamole

What to Do: Put your cheese and extras in between two tortillas and crisp it up in the quesadilla maker.
